Abstract

Aspergillus flavus grew on a substrate of crushed and fresh red pepper (Capsicum frutescens) and produced anatoxins B1 and G1. In addition, there was a shift in the ratio of aflatoxins B1 to G1 as compared to the ratio of these aflatoxins when grown on a Wort agar substrate. The increase in the proportionate amount of aflatoxin G1 to aflatoxin B1 extracted from the crushed red pepper was statistically significant at the 0.1% level.
