Abstract: The reactions between (+)-catechin and a representative oak wood aldehyde (furfuraldehyde, 5-(hydroxymethyl)furfuraldehyde, 5-methylfurfuraldehyde, vanillin, or syringaldehyde) in a wine-like model solution were studied and the formed condensation products were characterized by LC/MS and LC/MS/MS.
