Influence of syringe and needle sizes on production time and size of microencapsulated bead of Lactobacillus Plantarum-sodium alginate-banana peel

Abstract

The objective of the study was to evaluate the influence of syringe and needle sizes on production time and bead size of Lactobacillus plantarum-sodium alginate-banana peel. The bead was produced using the extrusion method. The 25G and 23G of needles produce 0.5 mm to 1 mm and 1 mm to 2 mm bead size, respectively. No different of bead sizes were observed when different syringe size was used. Higher internal diameter of syringe needle and smaller syringe size produced bead in fastest processing time (1 min). The extrusion using 23G syringe needle and 10 ml syringe obtained smallest bead size and fastest processing time. This crucial information could further optimise the extrusion process and future up-scaling process.
