Abstract: A β-glucosidase preparation from 'Marianna' plum was characterized. Only monoglycosides with a β-linkage to aromatic aglycones were hydrolyzed. A single pH optimum at 5·3 was found. The highest specific activity occurred with the substrate prunasin (d(—)-mandelonitrile-β-glucopyranoside). β-Galactosidase activity was also detected.
