The kitchen of the Gallo-Roman villa of Coste Deferne in Puy-en-Velay (Haute-Loire)

International audience; In 2005, preventive archaeological excavations of a Roman villa were undertaken in the locality of Puy-en-Velay (Haute-Loire, Auvergne) in the southern periphery of the ancient settlement of Anicium. For the first time in the territory of the Vellavi, it has been possible to obtain the complete plan of a Roman villa settled in the last third of the 1st century AD and lasting until the 3rd and 4th centuries AD. In one of the rooms of the residential quarter, various installations suggest the presence of a kitchen, whose used waters were evacuated through a masonry-built sewer along the northern wing of the villa.; Une opération de fouille archéologique préventive d’une villa d’époque romaine a été réalisée en 2005 à Coste Deferne sur la commune du Puy-en-Velay (Haute-Loire, Auvergne). Cette opération a permis de mettre au jour, en périphérie méridionale de l’agglomération antique du Puy-en-Velay (Anicium), pour la première fois en territoire vellave, le plan complet d’une villa implantée dans le dernier tiers du Ier s. apr. J. C. et qui perdure aux IIIe et IVe s. apr. J. C. Différents aménagements de l’une des pièces de la partie résidentielle suggèrent la présence d’une cuisine dont les eaux usées sont évacuées par un égout maçonné bordant l’aile septentrionale.
