Ekološka govedoreja v primerjavi s konvencionalnim načinom prireje in ekonomika

Abstract

Predstavljena je organiziranost in sledljivost skupine proizvajalcev za »Rdeče eko meso«, ki deluje znotraj Kmetijske zadruge Šaleške doline. Meso prodajajo pod lastno blagovno znamko EKODAR. Primerjali smo tri kategorije govedi in sicer, ekološke in konvencionalne telice, bike do 24 mesecev in bike nad 24 mesecev. Znotraj vsake kategorije smo preverjali oceno konformacije, oceno zamaščenosti in maso hladnih klavnih trupov. Ugotovili smo, da je pri ekoloških telicah in bikih do 24 mesecev ocena konformacije boljša kot pri konvencionalnih, kar za skupino ekoloških bikov nad 24 mesecev ne velja. Ocena zamaščenosti je pri vseh kategorijah ekoloških govedi boljša od konvencionalnih. Masa hladnih klavnih trupov je bila pri ekoloških telicah in bikih do 24 mesecev manjša kot pri konvencionalnih. Pri ekoloških bikih nad 24 mesecev velja, da je masa hladnih klavnih trupov večja od konvencionalnih. Največji odkup goveda je bil v mesecu decembru, saj je bilo odkupljenih 157 živali. Izkaz poslovnega izida na koncu obračunskega obdobja v letu 2011 znaša 12. 046 €, tudi v skupini proizvajalcev za »Rdeče eko meso« so poslovali pozitivno in sicer, na koncu leta 2011 je dobiček znašal 30. 928,12 €. The organisation and tracking of the group of manufacturers ‘’Red eco meat’’ is presented inside the farming cooperative of the Šaleška valley. They sell the meat under their own trade mark EKODAR (gift of eco). We compared three categories of cattle: the ecological and conventional heifers, bulls up to 24 months of age and bulls above the age of 24 months. Within every category we checked the grade of the conformation, the grade of fattiness and the mass of the cold slaughter torsos. We discovered that with the ecological heifers and bulls up to 24 months the grade of conformation was better than with the conventional. But this was not so in the case of the bulls over 24 months of age. The grade of fattiness was better in all categories of ecological cattle. The mass of the cold slaughter torsos was smaller with the ecological heifers and bulls up to 24 months in comparison with the conventional cattle. But with the ecological bulls over the age of 24 months the mass of cold slaughter torsos was larger than those of the conventional ones. The largest purchase of cattle took place in the month of December as 157 animals were purchased. The business outcome at the end of the accounts period of the year 2011 came to be 12.046 €. The manufacturers of the ‘’Red eco meat’’ also had positive business outcomes as their profit equalled 30.928,12 € at the end of 2011.
