Anti-Inflammatory Potential of Quatro Eggs Consumption in Healthy Young Individuals

Abstract

Introduction: Our previous study demonstrated mild increase in serum concentration of anti- inflammatory cytokine IL-10 after comsuption of omega-3 polyunsaturated fatty acids enriched hen eggs in young healthy participants (Stupin et al., 2020). Therefore, the aim of this study was to determine serum concentrations of inflammatory and anti-inflammatory cytokines in young healthy individuals who consumed hen eggs enriched with four components - omega-3 polyunsaturated fatty acids, vitamin E, lutein and selenium. Methods: Randomized, double-blind placebo- controlled study was conducted in healthy young subjects (N=35) who consumed 3 chicken eggs per day for 3 weeks. Subjects in the "Quatro" group consumed enriched hen eggs, and control subjects consumed ordinary hen eggs, produced on the same farm. Serum concentration of IL- 17A, IL-10, IL-6 and TNF-alpha was determined by commercially available kit and analyzed on Luminex platform.
