•STEC contamination of wheat flour is a major issue in wheat milling.•Phages significantly (P < 0.05) reduced STEC contamination in wheat during tempering.•Wheat tempering with bacteriophage had minimal effects on flour quality.•Using phages during wheat tempering is a viable food safety solution for wheat milling.
