Abstract
- •Spore-forming bacteria could represent health threat in insect-based foods.•The occurrence of Bacillusand clostridia has been reported in insect-based foods.•The application of hurdle technology could help in managing germination of spores.•Challenge tests can be useful to evaluate the behavior of spore-forming bacteria.
