Abstract

The article presents a study on the use of coconut water and sugar-cane juice to carried out extracellular polysaccharide (EPS) production by Lactobacillus confusus in liquid and solid state fermentation. The study showed that high concentrations of EPS of sugarcane juice and coconut water were produced in solid state fermentation by reducing nitrogen sources. Moreover, it mentions that coconut water and sugar-cane juice were subjected to solid state fermentation in enhancing EPS production.
