Abstract

The article discusses the result of a study on the characteristics of organic pasture milk. It states that the process of producing fresh milk can be done by cooling and storing raw milk for up to three days at the farm before distributing it over long distances. It adds that the criteria for determining milk quality are oriented towards hygiene, a long shelf life, and achieving a flavor that has no dissonant tastes. It also notes that milk quality differs from season to season and can be explained by differences in feeding regimes, grassland composition, and processing steps.
