Abstract

An encyclopedia entry for "smoking hazards" is presented. Under Great Britain's food safety laws, it is an offence for a food handler to smoke while handling food or when inside a food room. Hand-to-mouth contamination being passed to high risk foods is the principal hygiene risk during food preparation.
