Abstract
- The article investigates the distribution of each sanshool in the Japanese pepper plant grown in various regions citing the change in composition of sanshools during maturation of the fruit. A quantitative analysis of sanshool compounds in Japanese pepper and their pungent characteristics were conducted. The study has calculated the degree of pungency and evaluated the pungent qualities of the products.
