A study conducted at Shenzhen University focused on the antioxidant and antiosteoporotic activities of oyster peptides prepared through ultrasound-assisted enzymatic hydrolysis. The research found that this method significantly increased the peptide content and antioxidant properties of the oyster protein hydrolysate, leading to improved osteogenic cell proliferation and mineralization.
