Abstract

A study conducted by researchers at Nguyen Tat Thanh University in Ho Chi Minh City, Vietnam, explores the potential health benefits of cascara kombucha as a functional beverage. The study found that cascara kombucha effectively decreased free radicals, alpha-amylase, and lipase activity, suggesting its potential as an antioxidant and for modulating carbohydrate and lipid metabolism. In a mouse model, oral administration of cascara kombucha improved liver health, reduced fasting blood glucose levels, and lowered serum cholesterol content induced by a fat-enriched diet.
