Abstract

A study conducted by researchers at Southwest University in China has found that a bacteriocin called paracin wx7 shows selective inhibition against vancomycin-resistant Enterococcus faecalis (E. faecalis), a bacteria that poses a health risk in fresh-cut vegetables. The bacteriocin demonstrated instant bactericidal effects and damaged the membrane integrity of E. faecalis, resulting in cell deformation. Additionally, paracin wx7 induced the production of reactive oxygen species in the cytoplasm of the bacteria. This research provides insights into the potential use of paracin wx7 as a biopreservative in food to combat vancomycin-resistant E. faecalis. [Extracted from the article]
