Abstract

There are a series of considerations according to celery used as component of nutraceutical products may have health benefits. The aim of this study is to determine the nutritional content of celery destined to be used as matrix for nutraceutical prototype. The prototype of a selenium enriched celerybased nutraceutical consists in a matrix based on selenium enriched Apium graveolens L. Dacia variety. The nutritional status of the analyzed prototype is characterized by satisfactory nutritional status concerning the crude chemical composition, contents in macroelements, microelements, and also bioactive molecules as seleno-amino acids, polyphenols, vitamins A and E.
