Abstract

Current animal production and processing systems have benefitted from vast improvements in efficiency to meet ever-growing consumer demands. U.S. per capita availability of beef, pork, chicken, and fish. and reduce the physical and psychological distances between food production and consumers. Larger animals also remain in the system longer, so beef production facilities face different challenges. In contrast, beef production has large and small operations in different parts of the production system, many different entities make major decisions across the system, and there is much greater interaction between the cattle and the natural environment.
