Abstract

The article discusses the results of a study showing the potential for the synthesis of various O-methylated polyphenols that may be applied to in vivo and in vitro studies and functional diets. Topics mentioned include the isolation of the enzyme gene and expression of the recombinant enzyme, the structure elucidation of O-methylated EGCGs (epigallocatechin gallates), and optimal pH and temperature of the enzyme. It also details the time-dependent changes in O-methylated EGCG production.
