- Presents a study that investigated and collected data for one year on the cost and quality aspects of utilizing pre-prepared frozen entrees and serving them to hotel guests. Description of the test program in pre-prepared frozen entrees; Assessment of food cost as a percentage of food sale when pre-prepared frozen entrees were used; Details on the ratings given to entrees according to type of food-service establishment.
