Abstract

The article examines the involvement of anthocyanins and other phenolic compounds in 1,1 Diphenyl-2-picrylhydrazyl (DPPH) radical-scavenging activity of purple-fleshed sweet potato cultivars. Results of high-performance liquid chromatography analysis showed the high anthocyanin content of Ayamurasaki, while Miyanou-36, Bise and Tanegashimurasaki contained cyanidin aglycon. The researchers also measured the color value of sweet potato powder.
