Abstract
- The article discusses efforts at the University of Manitoba in Winnipeg, Manitoba to develop foods with health-promoting properties. The Richardson Centre, with the assistance of funding from several agriculture firms including Archer Daniels Midland and Cargill, is trying to find uses for various ingredients including beta-glucans from barley.
