Abstract

The article focuses on the sustainability initiatives implemented by the dining services team at Binghamton University in New York. Rich Herb, chef manager for Sodexo, along with Juliet Berling, environmental resource manager, and Pete Napolitano, director of auxiliary services, are integral to the changes. A test facility was used to help get green initiatives going. Herb and his team found that much of what they were already using on campus was recyclable and fit into the composting program.
