Abstract

This article discusses the characteristics and uses of the aubergine, or eggplant. Egglants come in a variety of sizes, shapes, and colors and are usually eaten when they are immature. The longer varieties are better for chopping and for use in stir frying and the larger round ones are better for slicing and layering in Italian dishes. The article also explains how to grow aubergines and how to care for them while growing.
