Abstract

Researchers from Justus-Liebig-University Giessen conducted a study on upcycling food industry side streams using basidiomycetes to produce a vegan protein source. The research focused on submerged propagation of mushrooms in agro-industrial side streams, resulting in protein-rich mushroom mycelia. The study concluded that agro-industrial side streams, such as apple pomace, can be biotransformed by basidiomycetes to enhance their nutritional value.
