Abstract

A recent report from the University of Extremadura in Caceres, Spain discusses the use of proteomics as a tool for studying foodborne moulds. Proteomics can help researchers understand the antifungal mechanisms of biocontrol agents against moulds, but there are limitations that need to be overcome. The integration of other omics and the development of computational tools are necessary to fully comprehend the metabolism and physiology of moulds. The study suggests that looking at applications of proteomics in other fields, such as clinical proteomics, can provide insights for further development in the food industry.
