Abstract

A study conducted at the University of Life Sciences in Lublin, Poland, examined the effects of calcium chloride (CaCl2) on the properties of pea protein isolate (PPI)-based films. The researchers found that the addition of CaCl2 caused darkening and a color shift in the films, as well as decreased light transmission and moisture content. It also negatively impacted the mechanical strength of the films. The type of plasticizer used in the films influenced how CaCl2 affected their properties. Overall, the study concluded that incorporating CaCl2 into PPI-based films did not provide significant benefits and actually worsened certain key properties. [Extracted from the article]
