Abstract

A recent study conducted by researchers at the University of Guanajuato in Mexico explores the principles and challenges of whole cell microbial biosensors (WCMB) in the food industry. WCMBs are genetically modified microorganisms used to detect biological and chemical contaminants and identify compounds of interest in food. The study highlights the importance of selecting appropriate chassis cells and integrating recognition elements and transducers to maximize the effectiveness of WCMBs in detecting contaminants and compounds. The research also discusses challenges such as cell stability, regulatory restrictions, and the need to optimize response times for WCMBs to be competitive in the market.
