Abstract

This article discusses the efforts of Chef Rotanak Ros, also known as Chef Nak, to preserve and promote traditional Cambodian cuisine. Chef Nak collaborates with Brasserie Louis at Rosewood Phnom Penh and offers epicurean experiences, such as cooking classes and market tours, in her hometown of Prek Loung. She has also published cookbooks that document Cambodia's iconic dishes. Chef Nak's work is driven by a desire to prevent the loss of Khmer food traditions, which were heavily impacted by the Khmer Rouge regime. The article also provides a glimpse into Chef Nak's homestay, where guests can experience the flavors of Khmer cuisine firsthand. [Extracted from the article]
