Abstract
- A recent study conducted by investigators at the Faculty of Human Ecology in Bogor, Indonesia, explored the potential of using Telang flower (Clitoria Ternatea L.) to produce kombucha, a fermented tea beverage. The researchers conducted metagenomic analysis to examine the microbial ecology of the kombucha and assessed its safety aspects, including microbiological safety, organic acid content, heavy metal contamination, pH, and alcohol content. The study found that Telang flower kombucha is safe to consume, with no pathogenic bacteria or heavy metal contaminants detected. The fermentation process also increased the antioxidant compounds and activity in the beverage.
