Abstract

Researchers at the Max-Planck-Institute for Polymer Research in Mainz, Germany have conducted a study on the rheology and particle formation during the crystallization of highly supersaturated sucrose solutions under shear. The study utilized rheo-microscopy to observe the crystal formation in real-time and found that as crystal growth occurred, the viscosity of the solution decreased due to a decrease in solute concentration. The research provides valuable insights into the complex interactions between crystal growth and rheological properties in non-equilibrium processes.
