Abstract

A recent study conducted by researchers at the University of Sfax in Tunisia explored the characteristic profiles, thermal properties, and oxidative stability of cold-pressed oils derived from moringa, milk thistle, and jujube seeds. The findings revealed that these oils possess high nutritional value and can be utilized in various fields. Jujube seed oil exhibited the best quality parameters, while milk thistle seed oil showed absorbance in a wider range of UV light. Jujube seed oil also contained the highest content of polyphenols, making it more stable against thermal oxidation.
