Abstract

A new report from the Fraunhofer Institute of Process Engineering & Packaging in Germany examines the stability of primary aromatic amines (PAAs) in aqueous food simulants. PAAs can potentially migrate from packaging materials into food and are of concern due to their toxicological properties. The study found that several PAAs exhibited a loss of recovery under certain storage conditions, with 7 substances identified as the most unstable. The research also concluded that PAAs have greater stability in water compared to 3% acetic acid.
