Abstract

This article explores the cultivation and utilization of whiskered brome, an almost forgotten grain species, for craft beer production. Whiskered brome, native to Central Europe, was traditionally used in the making of flat cakes but is now endangered due to improved seed cleaning and selective herbicide use. A research project focused on cultivating and using this ancient grain for beer production, revealing its potential for future breeding. The article also delves into the dehusking, malting, and fermentation processes involved in brewing beer from whiskered brome. The resulting beer, brewed with a modern hybrid yeast and English hop variety, boasts a nutty aroma, full-bodied amber color, and phenolic and spicy notes. The grain's high β-glucan content lends the beer an oily, viscous texture.
