Abstract

Considerable amounts of fish processing by-products are discarded each year. By developing enzyme technologies for protein recovery and modification, the production of a broad spectrum of food ingredients and industrial products may be possible. Collagen peptides are good food products obtained from fish by-products. Collagen peptides are small pieces of animal collagen, which are beneficial for new cell growth, repairing dead skin cell, blood clots and bone formation. The physicochemical properties of fish collagen peptides are also very important. However, there are very less studies that focus on physicochemical properties of fish collagen peptides so far. This paper describes various functional properties of collagen such as solubility, water-absorption capacity, emulsifying properties, foaming properties and fat-absorption capacity along with amino acid composition and mineral analysis.
