Abstract

A recent study conducted by researchers at Jiangsu University in China has developed a paper-based sensor that can detect ammonia (NH3) concentration in real-time and monitor the freshness of chilled chicken. The sensor, which utilizes a ratiometric fluorescent probe, showed a good linear relationship with NH3 concentration and had a limit of detection of 288 nM. By observing observable shifts in fluorescence color, the sensor can indicate the freshness of chicken breast refrigerated at 4 °C.
