Abstract
- A recent study conducted by researchers at Liaocheng University in China analyzed the field of meat preservation research using the Web of Science Core Collection. The study utilized software tools to analyze 1672 papers and map the knowledge structure of the field. The research identified seven categories within meat preservation research and highlighted the importance of plant essential oils in ongoing studies. The findings of this study can assist researchers in understanding the development of the discipline and identifying key areas for future research. [Extracted from the article]
