Abstract

A recent report from the University of Pavia in Italy discusses the use of Surface-enhanced Raman Scattering (SERS) sensing in food safety. The researchers highlight the advantages and perspectives of SERS sensing in relation to specific analytes of interest in the Oltrepò Pavese area of Italy, including glyphosate in rice fields, histamine in wine, tetracycline in waste sludges, and Sudan dyes in saffron and other spices. The report discusses the different methods used to prepare SERS substrates and the limits of detection for each analyte. The research was supported by the European Union-NextGenerationEU.
