Abstract
- In 2021, an experiment was set for drying blackcurrant fruit from the Titania and Lisil cultivars in two variants: control and the application of YaraMila STAR mineral fertilizer. Indicators of the biochemical composition of fresh and dried fruits from the variants of both cultivars were reported. The dry matter weight of fresh fruit between cultivars and variants ranged from 22.95% (Lisil-in the application of mineral fertilizers) to 27.19% (Titania-from the control). The highest refractometric dry substance was registered in the control of Titania with 18.5%. The highest value of total sugars was registered in Titania, but in the variant with mineral fertilizer with 16.20%. The highest values of anthocyanins (99.68 mg/%) and pectin (2.90%) were reported in that variant of the cultivar. Higher values were observed than Lisil variants in terms of total polyphenols, respectively: YaraMila STAR (358.37 mg/%) and control (324.41 mg/%). The dry matter weight in dried fruits was in the range from 84.92% (Titaniacontrol) to 86.80% of the same cultivar in the mineral fertilizing variant (YaraMila STAR). The highest content of total sugars was registered in the control variant of Titania (39.30%). The highest content of sucrose was found in the control group with Titania (19.19%), as well as for the indicators of anthocyanins (100.81 mg/%), and pectin (1.88%). The highest amounts of total polyphenols were found in the group with mineral fertilizing in fruits of Titania (567.33 mg/%) and slightly less in the control of the same cultivar (554.60 mg/%).
