Abstract

The article presents information on oyster farm set up by Callum McCallum off his family's coastal land between Clevedon and Kawakawa Bay. The farm has burgeoned into the well-known Clevedon Coast Oysters and the little shed where it all used to happen has been extended into a full processing operation with a team of marine farmers, harvesters, shuckers, sellers and administrators, all housed in a purpose-built complex. reheat gently and serve with black pepper and more parsley. The genus name of these particular molluses is Crassostrea gigas. They grow in the sparkling eastern reaches of the Hauraki Gulf, both straight out from the firm's headquarters, and also just across the channel at Waiheke Island.
