Abstract
- The article features Spanish chef Ángel León and his efforts to harvest rice from the ocean. Also cited are the novel menus created by León at his Aponiente restaurant in the port town of El Puerto de Santa María in Spain like mortadella made of sea bass, his campaigns to discuss the fragility of the ocean ecosystems, and his sustainability projects in cooperation with universities.
