Abstract

The article offers information on the use of fresh herbs for summer cooking. Topics discussed include edible flowers and dill fronds in dough in Carta di Musica; use of tender herbs like basil and dill for sealing whole, unbruised herb leaves in dough; and bruise herbs such as mint with a rolling pin or a wooden spoon to rupture more of the cell walls and free the flavorful oils.
