Abstract

Helicobacter pylori is considered as the main risk factor in the development of gastric cancer. In the present study, anti- H. pylori activity of Lactobacillus fermentum GBF and its fermented antimicrobial products of fermented skimmed bovine milk were investigated. The whey containing Lb. fermentum and its products after skimmed bovine milk fermentation showed powerful antimicrobial activity against H. pylori. In addition, micro filtered soluble peptides of skimmed bovine milk fermented by Lb. fermentum GBF achieved powerful H. pylori inhibitory effect at different concentrations with the highest Minimum Bactericidal concentration (MBC) observed at 1:8 soluble peptides dilution when compared with Lb. fermentum GBF fermented MRS and unfermented skimmed bovine milk. The results demonstrated that fermented bovine milk with Lb. fermentum GBF is a very good candidate as a prophylactic for the protection of humans against H. pylori infections.
