Abstract

The article presents information on soy. According to the author, soy is a versatile and complete plant protein. Like meat, poultry, fish and dairy products, it contains all the amino acids that the body needs. It contains key nutrients, such as iron and zinc, found in meat. Edamame and soy nuts are also packed with B vitamins and are high in fiber, while tofu and soy milk are fortified with calcium and vitamin D. Unlike animal protein, though, soy has little to no saturated fat and zero cholesterol. Soy can be the basis of dinners and even desserts that are satisfying and nutritious.
