Abstract

This article reports on the 2003 Council for Hospitality Management Education Hospitality Research Conference in Great Britain. Each year, the conference is hosted by different institutions in Great Britain. The aims of the Hospitality Research Conference are to promote and enhance the quality of research in hospitality management by enabling researcher to share effective practice and to encourage and support research students, and others who may be new to research and its dissemination. The theme of the conference was Trends and Developments in Hospitality Research, and the presentations were based upon full papers and work-in-progress papers. The proceedings and the conference program were divided into seven coherent themes. These were service and service quality; marketing, customers and guests; strategy, structures and performance, including finance; human resource management; food, food safety, food service and dining; education; and tourism. All papers were based on applied industrial research providing the delegates with a variety of issues to debate on enhancing service quality through the identification gaps between expectations and service delivery. These research papers will enhance the contemporary debates that are occurring about consumer behavior within the hospitality industry.
