Abstract
- The article discusses the trend in dinner. Topics discussed include replacement of staples like beef, butter and eggs with lean poultry, fish and reduced-calorie margarines; addition of fermented sauerkraut for gut-health and sizes of meat and poultry entrées continue to shrink in favour of sustainable fish. It presents recipe for Wild Salmon with Horseradish-Mustard Sauce and Farro-Kraut Pilaf.
