Abstract

The article explores the trends in natural antimicrobial ingredients used by food processors in response to the rising consumer demand for clean label products. Topics discussed are the use of vinegar powder in ready-to-eat meats and fresh meat poultry and fish products, use of celery powder in processed meat and poultry products, the beneficial properties of essential oils and their effect on product taste, and factors considered in combining antimicrobial ingredients.
