Abstract

The aim of this paper is to present innovative solutions to active packaging of food products. Definition, functions, division and application in food industry of active packaging is explained. Active substances, i.e. responsible for active functions, are able to absorb or emit oxygen, carbon dioxide, ethylene, flavors and aromas, regulate relative humidity atmosphere in the package and/or show the antibacterial and antioxidant effects. Active substances are placed in bags, strips or labels or they are included into packaging material. The purpose of active packaging is to extend the shelf life, the preservation of the organoleptic attributes of the products and to guarantee food safety. [ABSTRACT FROM AUTHOR]
