Abstract

Highlights: [•] First time, the texture distribution of salmon fillet was assessed non-invasively. [•] Both image texture and spectral features were extracted from hyperspectral images. [•] Spectra at 400–1000nm and 967–1634nm were compared for assess texture of salmon. [•] The selection of IOW and POW was proposed instead of traditional variable selection.
