Highlights: [•] Flavour of medium and long shelf-life Charentais cantaloupe melons was compared. [•] Volatile and semi-volatile profiles were correlated with sensory data using multifactorial analysis. [•] Maturity at harvest has a significant impact on the flavour of medium-shelf life fruit.
